~Khask e Budemjun~

Ingredients~

  • 2 large aubergines
  • 2 large onions chopped
  • 4-6 cloves of garlic chopped
  • 1/2 cup of liquid whey ( then add 2 tbsp of water)
  • vegetable oil
  • 1 tsp of salt
  • 1 tsp of ground black pepper
  • 1/2 tsp of sugar
  • 2 tbsp of dried mint
  • 30 mls of liquid saffron

  1. thanks to the idiotic sanctions saffron is becoming very hard to find in the United States and I have settled down here and probably won’t be leaving again.
    any substitute I can find for saffron will only replace the colour – I am tempted though to add a but of ginger and cumin instead if I can not find any saffron when I go the markets in the city.
    No Iranian where I live – Indian, Caribbean and Mexican
